Make this easy marmalade tart part of a brunch menu, or eat it anytime with a steaming cup of tea or coffee.
Ingredients (12)
- 50g unsalted butter
- 30g caster sugar
- 1 teaspoon vanilla extract
- 125g flaked almonds
- 2 tablespoons milk
- 1 cup marmalade or jam
Pastry base
- 150g unsalted butter
- 225g plain flour
- 4 tablespoons cornflour
- 1/2 teaspoon baking powder
- 120g caster sugar
- 1 teaspoon vanilla extract
Method

1.To make the pastry base, place the butter, flour, cornflour, baking powder, sugar, vanilla and 1/4 teaspoon salt in a food processor and process to combine until the mixture is crumbly. Press the dough into a 10 x 36cm greased and lined tart pan with a removable base. Refrigerate for 30 minutes to chill.

2.Preheat the oven to 180°C.

3.Meanwhile, place the butter, sugar, vanilla, almonds and milk in a saucepan over low heat, stirring, until butter has melted. Set aside to cool slightly.

4.Spread the marmalade over the pastry base, pour over the topping and bake for 25-30 minutes until golden and cooked through. Serve warm.
