Rainbow slaw with miso-sesame dressing
Ingredients (15)
- 2 cups finely shaved red cabbage (about 1/4 small cabbage)
- 2 cups finely shaved white cabbage (about 1/4 small cabbage)
- 1 1/2 cups shredded kale (about 1/4 bunch)
- 1 large carrot, shredded (we used a julienne peeler)
- 1 zucchini, shredded (we used a julienne peeler)
- 3 long green shallots, thinly sliced, plus extra to serve
- Roasted sesame seeds, to serve
Miso-sesame dressing
- 1/4 cup (60ml) soy sauce
- 2 1/2 tbs rice vinegar
- 3 tsp finely grated ginger
- 3 tsp white (shiro) miso
- 1 garlic clove, finely grated
- 100ml vegetable oil
- 3 tsp sesame oil
- Juice of 1/2 a lemon, or to taste

1.For the miso-sesame dressing, place soy sauce, rice vinegar, ginger, miso and garlic in a bowl and whisk until smooth and combined. Add remaining ingredients and whisk to combine, then season to taste and set aside.

2.Combine cabbages, kale, carrot, zucchini and long green shallot in a large bowl and toss to combine. Drizzle over dressing to taste, toss to lightly coat and serve scattered with sesame seeds and extra long green shallot.
