Fagioli all'uccelletto (beans in a jar)

In Italy, this dish is made with dry beans slowly cooked overnight in jars. Our version is a quick alternative to this traditional dish and pairs well with stuffed pork loin or rolled, stuffed turkey breast.
Ingredients (7)
- 1/4 cup (60ml) extra virgin olive oil, plus extra to store
- 2 garlic cloves, chopped
- 6 fresh sage leaves
- 500g canned cannellini beans, drained, rinsed
- 300g tomato passata (sugo)
- 1 tablespoon tomato paste
- 1 teaspoon caster sugar
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Heat the olive oil in a large frypan, add garlic, sage, cannellini beans, passata, paste and sugar, and season.

2.Simmer for 20 minutes over low heat, stirring occasionally. Pack into a sterilised preserving jar and cover with a little more extra virgin olive oil. Allow to cool, then seal. These keep well for up to 1 week in the refrigerator.
