Take a stroll down nostalgia lane with these sweet fairy cakes!

Ingredients (6)

  • 125 unsalted butter
  • 125g caster sugar
  • 2 eggs
  • 175g self-raising flour
  • 120g (1 cup) pure icing sugar
  • 20ml (1 tbs) lemon juice

Method

    Preheat the oven to 180°C. Place 12 paper patty cake cases in a 12-hole patty cake pan. Place butter and sugar in the bowl of an electric mixer and beat until pale and fluffy. Add eggs, one at a time, beating well after each addition. Sift in flour and carefully fold together with a metal spoon. Divide the mixture between paper patty cases and bake in the oven for 12-15 minutes. Set aside to cool.

    Place the icing sugar and lemon juice in a bowl. Add 1 tablespoon of warm water and stir until smooth. Spread the icing over cakes and, if desired, decorate the top with edible flowers or small chocolate eggs.
