Feel a little naughty when you bite into these sweet currant biscuits.

Ingredients (5)

  • 100g unsalted butter, softened
  • 1 1/2 cups (225g) plain flour
  • 50g currants
  • 2 tablespoons (40g) caster sugar, plus extra to sprinkle
  • 50-75ml milk

Method

  • 1.
    Preheat the oven to 200°C. Line a baking tray with baking paper.
  • 2.
    Use your fingers to rub butter into flour until mixture resembles breadcrumbs. Add currants and sugar, then stir in enough milk to give a firm dough.
  • 3.
    Roll out on a floured board until about 1/2cm thick. Cut out circles with an 8cm pastry cutter and place on the lined tray.
  • 4.
    Sprinkle with the extra caster sugar and bake in the oven for 20-25 minutes or until light golden.
