Ferrero Rocher brownies

If you thought chocolate brownies couldn't get any better, wait until you add Ferrero Rocher to the mix.
Ingredients (12)
- 80g unsalted butter
- 2 tbs cocoa powder
- 100g dark (70%) chocolate, chopped
- 150g (about 12) Ferrero Rocher chocolates, roughly chopped
- 2 tbs grapeseed oil
- 2 tbs Frangelico
- 2 eggs plus 1 extra yolk
- 100g brown sugar
- 1 tsp vanilla bean paste
- 120g plain flour
- 1/2 tsp baking powder
- 1/3 cup (110g) dulce de leche, warmed
Method

1.Preheat oven to 180ºC. Grease a 16cm x 26cm slice pan and line the base and sides with baking paper.

2.Melt butter, cocoa, dark chocolate and 100g Ferrero Rocher in a heatproof bowl set over a pan of simmering water (don’t let the bowl touch the water). Set aside to cool.

3.Whisk oil, Frangelico, eggs, egg yolk, sugar and vanilla in a bowl. Sift flour and baking powder in a separate bowl. Fold melted chocolate mixture and egg mixture into the dry ingredients. Pour brownie batter into the prepared pan and sprinkle with remaining 50g chopped Ferrero Rocher.

4.Bake for 12 minutes or until slightly risen and just soft in the centre.

5.Allow to cool slightly, then slice into 12 pieces. Drizzle with warm dulce de leche to serve.
