Ferrero Rocher brownies
If you thought chocolate brownies couldn't get any better, wait until you add Ferrero Rocher to the mix.

Ingredients (12)

  • 80g unsalted butter
  • 2 tbs cocoa powder
  • 100g dark (70%) chocolate, chopped
  • 150g (about 12) Ferrero Rocher chocolates, roughly chopped
  • 2 tbs grapeseed oil
  • 2 tbs Frangelico
  • 2 eggs plus 1 extra yolk
  • 100g brown sugar
  • 1 tsp vanilla bean paste
  • 120g plain flour
  • 1/2 tsp baking powder
  • 1/3 cup (110g) dulce de leche, warmed

Method

  • 1.
Preheat oven to 180ºC. Grease a 16cm x 26cm slice pan and line the base and sides with baking paper.
  • 2.
Melt butter, cocoa, dark chocolate and 100g Ferrero Rocher in a heatproof bowl set over a pan of simmering water (don’t let the bowl touch the water). Set aside to cool.
  • 3.
Whisk oil, Frangelico, eggs, egg yolk, sugar and vanilla in a bowl. Sift flour and baking powder in a separate bowl. Fold melted chocolate mixture and egg mixture into the dry ingredients. Pour brownie batter into the prepared pan and sprinkle with remaining 50g chopped Ferrero Rocher.
  • 4.
Bake for 12 minutes or until slightly risen and just soft in the centre.
  • 5.
Allow to cool slightly, then slice into 12 pieces. Drizzle with warm dulce de leche to serve.
