Fig and blackberry perfectly combine in these scrumptious bite-sized friands.
Ingredients (7)
- 180g unsalted butter, melted
- 6 eggwhites
- 200g icing sugar, plus extra to dust
- 60g plain flour, sifted
- 120g almond meal
- 1 firm fresh fig, finely chopped
- 24 (about 60g) fresh blackberries or other berries
Method

1.Preheat oven to 200°C. Use a little of the butter to grease a 12-hole friand pan.

2.Lightly beat eggwhites in a large bowl until frothy. Sift in icing sugar and flour, then add almond meal. Add melted butter, stir until just combined, then pour into pan. Top each friand with 2 berries and some chopped fig.

3.Bake for 18-20 minutes, turning tray halfway, until tops are golden and springy to the touch. Stand for 5 minutes, then turn onto a rack to cool slightly. Dust with icing sugar and serve warm.
