Fig and blackberry friands
Fig and blackberry perfectly combine in these scrumptious bite-sized friands.

Ingredients (7)

  • 180g unsalted butter, melted
  • 6 eggwhites
  • 200g icing sugar, plus extra to dust
  • 60g plain flour, sifted
  • 120g almond meal
  • 1 firm fresh fig, finely chopped
  • 24 (about 60g) fresh blackberries or other berries

Method

  • 1.
    Preheat oven to 200°C. Use a little of the butter to grease a 12-hole friand pan.
  • 2.
    Lightly beat eggwhites in a large bowl until frothy. Sift in icing sugar and flour, then add almond meal. Add melted butter, stir until just combined, then pour into pan. Top each friand with 2 berries and some chopped fig.
  • 3.
    Bake for 18-20 minutes, turning tray halfway, until tops are golden and springy to the touch. Stand for 5 minutes, then turn onto a rack to cool slightly. Dust with icing sugar and serve warm.
