These are no ordinary fritters, with a sublime flavour combination that's guaranteed to leave everyone feeling happy.

Ingredients (11)

  • 100ml honey
  • 4 thyme sprigs, plus extra to serve
  • 1 vanilla bean, seeds scraped
  • 2 eggs, lightly beaten
  • 2 tbs caster sugar
  • 500g ricotta
  • Finely grated zest of 1 lemon
  • ½ cup (125ml) milk
  • 1 cup (150g) self-raising flour
  • 4 fresh figs
  • ¼ cup (60ml) extra virgin olive oil

Method

  • 1.
    Place honey in a saucepan with thyme and vanilla seeds. Place over medium heat and warm, but do not boil. Set aside to infuse.
  • 2.
    Combine eggs, sugar, 300g ricotta, zest, milk and flour in a bowl. Finely chop 2 figs and add to the mixture.
  • 3.
    Heat 1 tbs oil in a large frypan over medium heat.
  • 4.
    Drop heaped tablespoons of batter into the pan and cook for 2-3 minutes or until bubbles appear on the surface. Flip over and cook for 1 minute or until golden.
  • 5.
    Repeat with remaining batter and oil.
  • 6.
    Serve with remaining figs (sliced), ricotta, infused honey and extra thyme leaves.
