Fig, honey and thyme ricotta fritters
These are no ordinary fritters, with a sublime flavour combination that's guaranteed to leave everyone feeling happy.
Ingredients (11)
- 100ml honey
- 4 thyme sprigs, plus extra to serve
- 1 vanilla bean, seeds scraped
- 2 eggs, lightly beaten
- 2 tbs caster sugar
- 500g ricotta
- Finely grated zest of 1 lemon
- ½ cup (125ml) milk
- 1 cup (150g) self-raising flour
- 4 fresh figs
- ¼ cup (60ml) extra virgin olive oil

1.Place honey in a saucepan with thyme and vanilla seeds. Place over medium heat and warm, but do not boil. Set aside to infuse.

2.Combine eggs, sugar, 300g ricotta, zest, milk and flour in a bowl. Finely chop 2 figs and add to the mixture.

3.Heat 1 tbs oil in a large frypan over medium heat.

4.Drop heaped tablespoons of batter into the pan and cook for 2-3 minutes or until bubbles appear on the surface. Flip over and cook for 1 minute or until golden.

5.Repeat with remaining batter and oil.

6.Serve with remaining figs (sliced), ricotta, infused honey and extra thyme leaves.
