Ingredients (4)
- 1/2 cup drained canned crushed pineapple
- 1/2 cup (125ml) good-quality white rum
- 3 cups (750ml) sparkling wine
- Bitters, to serve

1.Place pineapple and rum in a cocktail shaker with crushed ice. Shake well, then divide among 6 glasses, topping up with wine. Finish with a few drops of bitters.
