Flatbread with hummus and spiced lamb

Ingredients (13)

  • 1 large flat focaccia, halved horizontally
  • 300g hummus
  • 6 (500g) lamb sausages, skins removed
  • 150g feta, crumbled
  • 1 tbs za’atar
  • 1/3 cup (80ml) extra virgin olive oil
  • 1 small red onion, cut into thin rings (we used a mandolin)
  • 2 tbs red wine vinegar
  • 2 green zucchini, cut into matchsticks (we used a julienne peeler)
  • ½ cup flat-leaf parsley
  • ½ cup mint leaves
  • Finely grated zest of ½ lemon
  • Juice of 1/2 lemon

Method

  • 1.
    Preheat oven to 210°C. Line a large baking tray with baking paper. Place focaccia cut-side up on tray and spread with hummus. Top with crumbled sausage meat, feta and za’atar. Drizzle with 2 tbs olive oil. Bake in oven for 20 minutes. Cut each piece into four.
  • 2.
    Meanwhile, combine onion, vinegar and a pinch of salt flakes in a small bowl and set aside for 10 minutes.
  • 3.
    When ready to serve, place zucchini, herbs, lemon zest and juice and remaining 2 tbs oil in a bowl, season and toss to combine. Top flatbread with zucchini mixture and drained onion and serve.
