Four-cheese ravioli with lemon-cream sauce

Everyone will love their greens when served with this creamy ravioli.
Ingredients (8)
- 1 cup fresh or frozen peas
- 100g sugar-snap peas, end trimmed
- 80g snow peas, end trimmed, thinly shredded
- 250ml (1 cup) thickened cream
- 40g unsalted butter
- 1 cup grated parmesan
- 1 lemon, zested, juiced
- 700g four-cheese ravioli
Method

1.Place peas in boiling salted water and cook for 5 minutes. Add sugar-snap and snow peas for the last minute. Drain, refresh and set aside.

2.Place cream, butter, parmesan and lemon zest and juice in a pan over low heat, stirring until butter melts. Season, then set aside.

3.Cook ravioli following packet directions. Drain. Dip vegetables briefly in boiling water.

4.Place ravioli on plates, drizzle with sauce and top with vegetables. Season and serve.
