Four-cheese ravioli with lemon-cream sauce
Four-cheese ravioli with lemon-cream sauce
Everyone will love their greens when served with this creamy ravioli.

Ingredients (8)

  • 1 cup fresh or frozen peas
  • 100g sugar-snap peas, end trimmed
  • 80g snow peas, end trimmed, thinly shredded
  • 250ml (1 cup) thickened cream
  • 40g unsalted butter
  • 1 cup grated parmesan
  • 1 lemon, zested, juiced
  • 700g four-cheese ravioli

Method

  • 1.
    Place peas in boiling salted water and cook for 5 minutes. Add sugar-snap and snow peas for the last minute. Drain, refresh and set aside.
  • 2.
    Place cream, butter, parmesan and lemon zest and juice in a pan over low heat, stirring until butter melts. Season, then set aside.
  • 3.
    Cook ravioli following packet directions. Drain. Dip vegetables briefly in boiling water.
  • 4.
    Place ravioli on plates, drizzle with sauce and top with vegetables. Season and serve.
