French toast with banana and maple syrup
Ingredients (9)
- 2 eggs, lightly beaten
- 1 teaspoon vanilla extract
- 2 tablespoons thin cream
- 30g unsalted butter
- 4 thick slices brioche (square)
- 1 banana, sliced
- Creme fraiche, to dollop
- Maple syrup, to drizzle
- Ground cinnamon, to dust

1.Beat the eggs together with the vanilla and cream. Heat the butter in a large non-stick frypan over medium heat. When butter is sizzling, dip brioche slices in egg mixture, then place in the pan. Cook brioche for 2 minutes on each side, or until golden.

2.To serve, stack 2 slices of French toast on each plate, then top with slices of banana and a small dollop of creme fraiche. Drizzle with maple syrup and dust with cinnamon.
