French toast
A classic brunch favourite, French toast is also a great way to use up stale bread. The drier the bread, the better it will soak up all that eggy goodness without falling apart.

Ingredients (7)

  • 4 eggs
  • 1 cup (250ml) pure (thin) cream
  • 1/3 cup (75g) caster sugar
  • 2 tsp vanilla extract
  • 75g salted butter, chopped, plus extra to serve
  • 8 thick slices white bread
  • Berries, ground cinnamon and maple syrup, to serve

Method

  • 1.
    Whisk eggs, cream, sugar and vanilla in a large bowl.
  • 2.
    Heat a little of the butter in a large frypan over medium-high heat. Dip one bread slice into egg mixture, turning to coat and soak. Place in pan. Repeat with another bread slice. Cook for 3-4 minutes each side until golden and cooked through.
  • 3.
    Repeat with remaining bread and egg mixture, adding a little butter between batches as needed.
  • 4.
    Top toast with extra butter, berries and a sprinkle of cinnamon. Serve drizzled with maple syrup.
