Fresh and dried fruit compote

Fresh pears mix with the intense flavours of dried fruit in this delightful fruit compote.
Ingredients (6)
- 500g mixed dried fruits (such as figs, apricots, prunes, orange slices dried)
- 1 cinnamon stick
- 1 vanilla bean, split, seeds scraped
- 4 tbs (1/3 cup) caster sugar
- 8 small firm pears (such as paradise)
- Yoghurt and ground cinnamon, to serve
Method

1.Place dried fruits, cinnamon and vanilla pod and seeds in a saucepan and add enough water to come 3cm above the fruit. Stir in sugar and bring to boil over medium heat. Peel pears, add to pan and simmer over low heat for 15-20 minutes until pears are just cooked. Use a slotted spoon to transfer fruit to a bowl. Increase heat to medium and boil syrup for 5-6 minutes to reduce slightly. Discard cinnamon and vanilla pod, pour syrup over fruit and cool. Serve with yoghurt, and ground cinnamon if desired.
