These crispy salt and pepper crab sticks are the perfect snack to make on a hot summer's day. Super fast and easy to make, Surimi seafood sticks are a quick and delicious option, only needing a handful of pantry staple ingredients and cooked to perfection in minutes. Swing past your local supermarket or fish shop and create the perfect salty snack to share with friends with a squeeze of lemon to serve.

  • 300g surimi seafood sticks (see note)
  • 1/2 cup (75g) cornflour
  • 1 1/2 tsp white pepper
  • Vegetable oil, to deep-fry
  • Lemon wedges, to serve

Method

    Pat the surimi dry with paper towel, and unravel a few (see note). Combine cornflour, white pepper, 1 1/2 tsp freshly ground black pepper and 11/2 tsp fine salt in a medium bowl.

    Heat the oil in a medium saucepan until 180°C (a cube of bread will turn golden in 60 seconds when the oil is hot enough).

    60 seconds when the oil is hot enough). Toss surimi in salt & pepper mixture until coated all over, then shake off excess. Deep-fry, stirring occasionally, for 3 minutes, or until golden and crispy. Drain on paper towel and serve immediately with lemon wedges.

Recipe Notes

Surimi seafood sticks are available from selected supermarkets and fish shops. They can come in various lengths. By unravelling some and leaving others whole, you’ll get different textures. The whole sticks will be crispy on the outside but still tender inside.
