“Chorizo is such a versatile ingredient. It can be used in salsas, tacos, as little nibbles… It will always add lots of flavour to everything. This is a perfect dish to go with a Sunday Mexican barbecue, what we call carne asada. It’s not complete with a bowl of frijoles charros!”

Ingredients (9)

  • 300g dried black beans or pinto beans
  • 4 garlic cloves, 2 whole, 2 finely chopped
  • 100g streaky bacon, chopped
  • 1 (100g) spicy soft chorizo, sliced, plus 1 (100g) extra, crumbled
  • 1 onion, finely chopped
  • 2 roma tomatoes, finely chopped
  • 1 fresh jalapeno, thinly sliced, plus extra, finely chopped, to serve
  • 2 carrots (halved lengthways if large), sliced
  • 1/3 cup finely chopped coriander, plus extra sprigs to serve

Method

  • 1.
    Soak beans in water for at least 6 hours. Drain beans and place in a large saucepan with whole garlic cloves and 2L (8 cups) water. Bring to the boil, then reduce temperature to medium and cook for 55 minutes or until beans are soft. Using a slotted spoon, transfer garlic to a plate and mash with a fork. Return to pan and stir through beans.

    Heat a large frypan over medium-high heat. Cook bacon and sliced chorizo, stirring occasionally, for 4 minutes or until golden and starting to brown. Add onion and cook, stirring occasionally, for 3 minutes or until softened. Add tomato, chopped garlic and jalapeno, reduce heat to medium and cook for 2 minutes. Add to the beans with the carrot, reserving the frypan. Season to taste and simmer for 10 minutes or until carrot is tender. Stir through coriander.
  • 3.
    Meanwhile, reheat the frypan over medium-high heat. Cook crumbled chorizo, stirring occasionally, for 3-5 minutes until cooked and lightly charred.
  • 4.
    Sprinkle beans with crispy chorizo, extra coriander and extra jalapeno to serve.
