Served warm, this trifle-like dessert combines berries, sponge cake and whisky spiked cream.

Ingredients (8)

  • 500g mixed frozen berries
  • 4 tablespoons redcurrant jelly
  • 300ml cranberry or apple juice
  • 4 teaspoons arrowroot
  • 300ml thick cream
  • 2 tablespoons honey
  • 2 tablespoons Drambuie or whisky
  • 6 slices plain sponge cake or brioche

Method

  • 1.
    Place berries in a saucepan over low heat with redcurrant jelly and juice, stirring, for 5 minutes until jelly has dissolved. Mix half the arrowroot with 1 tablespoon cold water, then add to berries. Cook until mixture thickens slightly. Set aside to cool.

    Place cream, honey and Drambuie in a saucepan over low-medium heat and simmer gently for about 5 minutes or until slightly reduced. Mix the remaining arrowroot with 1 tablespoon cold water, then add to cream mixture and cook for 1-2 minutes.
  • 3.
    To serve, cut cake into small pieces and layer in 6 glasses alternating with berries. Pour over warm toddy cream.
