Phillippa Grogan's Christmas mince pie ice cream
From Melbourne's favourite bakery, Phillippa's comes this easy recipe that's perfect for those hot summer days during Christmas. "This is incredibly easy and ideal for our summers. The recipe was given to me by Lynne, a great friend, who loves entertaining," says Phillippa.

- 6 good-quality mince pies
- 1L vanilla ice cream, softened
- Phillippa's Caramel Brandy Sauce, Pedro Ximénez Sherry, muscat or fresh berries, to serve

1.Place mince pies in a zip-lock bag and, using a rolling pin, crumble, then fold them into ice cream. Press mixture into a 1.2L pudding bowl lined with foil or baking paper and refreeze at least overnight. Make sure the ice cream is pressed down well to remove air pockets. Turn out onto a platter and drizzle with Pedro Ximénez Sherry. Serve with muscat or fresh berries, and Phillippa’s warmed Caramel Brandy Sauce alongside.
