Fruit mince tarts with quick cinnamon ice cream

Everyone loves a mince tart at Christmas - make yours stand out with this quick cinnamon ice cream.
Ingredients (3)
- 1L tub of vanilla ice cream
- 2 tsp ground cinnamon
- Fruit mince tarts
Method

1.Stand a 1-litre tub of vanilla ice cream at room temperature for 20-30 minutes to soften. Transfer to a large bowl. Add 2 teaspoons ground cinnamon and beat well with an electric beater to combine. Spoon the ice cream into a 1-litre loaf pan lined with plastic wrap, cover and refreeze until firm.

2.Preheat the oven to 170°C. Bake 24 Bakers Delight Fruit Mince Tarts for 3-5 minutes until warm.

3.Cut the ice cream into 1cm slices, then use a small, star-shaped cutter to cut out stars. Place stars on the warm tarts, dust with icing sugar and serve immediately.

4.Refreeze any remaining cinnamon ice cream.
