Fruity s'mores
Chocolate fondue meets s'mores in the most delicious way possible. Recipe by Mary's bar duo Jake Smyth and Kenny Graham.
Ingredients (9)
- 1/4 cup (55g) caster sugar
- 2 tbs olive oil
- 1/2 pineapple, cored, cut into 1cm-thick slices
- 2 bananas, halved lengthways
- 1/3 cup (80ml) maple syrup
- 100g dark chocolate, finely chopped
- 100g milk chocolate, finely chopped
- 1 cup (250ml) thickened cream
- 280g pink and white marshmallows
Method

1.Heat a barbecue or chargrill pan to medium-high heat.

2.Combine sugar, oil and a pinch of salt in a small bowl. Brush over pineapple and banana. Grill pineapple for 4 minutes each side and banana for 2 minutes cut-side down or until fruit is charred and golden. Transfer to a deep-sided tray and pour over maple syrup. Set aside to cool slightly.

3.Meanwhile, place chocolates in a heatproof bowl. Place cream in a saucepan over medium heat and bring to a simmer. Pour over chocolate and set aside for 2 minutes, then stir with a spatula until smooth.

4.Thread 4-5 marshmallows onto each skewer and grill, turning, until charred. Serve skewers with grilled fruits and chocolate sauce.
