Fruity s'mores
Chocolate fondue meets s'mores in the most delicious way possible. Recipe by Mary's bar duo Jake Smyth and Kenny Graham.

Ingredients (9)

  • 1/4 cup (55g) caster sugar
  • 2 tbs olive oil
  • 1/2 pineapple, cored, cut into 1cm-thick slices
  • 2 bananas, halved lengthways
  • 1/3 cup (80ml) maple syrup
  • 100g dark chocolate, finely chopped
  • 100g milk chocolate, finely chopped
  • 1 cup (250ml) thickened cream
  • 280g pink and white marshmallows

Method

  • 1.
    Heat a barbecue or chargrill pan to medium-high heat.
  • 2.
    Combine sugar, oil and a pinch of salt in a small bowl. Brush over pineapple and banana. Grill pineapple for 4 minutes each side and banana for 2 minutes cut-side down or until fruit is charred and golden. Transfer to a deep-sided tray and pour over maple syrup. Set aside to cool slightly.

    Meanwhile, place chocolates in a heatproof bowl. Place cream in a saucepan over medium heat and bring to a simmer. Pour over chocolate and set aside for 2 minutes, then stir with a spatula until smooth.
  • 4.
    Thread 4-5 marshmallows onto each skewer and grill, turning, until charred. Serve skewers with grilled fruits and chocolate sauce.
