Gado gado salad with white soy peanut sauce
White soy sauce
Get on trend and add white soy sauce to your store cupboard. Also known as shiro soy, white soy is lighter and sweeter than its counterparts. Use in delicate Asian dishes.

Ingredients (10)

  • 2 tbs extra virgin olive oil
  • 2 eggs
  • 250g snake beans or green beans, trimmed, blanched, refreshed
  • 2 truss tomatoes, sliced
  • 1 Lebanese cucumber, halved, sliced
  • 2 small red chillies, finely chopped
  • Toasted white sesame seeds, to serve

Peanut sauce

  • 1 1/2 tbs white soy sauce
  • 1/3 cup (95g) smooth peanut butter Juice of 1 lime
  • 1 garlic clove, finely grated

Method

  • 1.
    Heat oil in a frypan over medium-high heat. Break eggs into pan and fry for 2-3 minutes until edges are golden and white is cooked or until cooked to your liking. Remove and drain on paper towel.
  • 2.
    For the peanut sauce, combine all the ingredients and 1 tbs water in a bowl.
  • 3.
    Divide beans, tomato and cucumber between plates and top each with an egg. Serve topped with chilli, sesame seeds and drizzled with peanut sauce.
