Garlic mayonnaise

Everyone needs a classic garlic mayo recipe. Pair this with fish, barbecue chicken or hot, fresh chips!

Ingredients (5)

  • 2 garlic cloves
  • 2 egg yolks
  • 20ml (1 tbs) lemon juice
  • 125ml (1/2 cup) grapeseed oil
  • 12ml (1/2 cup) extra virgin olive oil

Method

  • 1.
    Peel garlic and crush with the heel of a large knife, adding a little salt to make a paste. Process garlic, egg yolks and lemon juice until smooth. Begin adding oil, drop by drop, at first, then allow a tiny single stream of oil unit at least a quarter of the oil has been absorbed. After this you can be a little more bold, adding the oil in a steady stream. If too thick, add a tablespoon of hot water and adjust the oil in a steady stream. If too thick, add a tablespoon of hot water and adjust for acidity, adding a little pepper and more lemon juice, if required.
