Spiced gazpacho with crab
Ingredients (11)
- A slice of day-old Italian-style bread
- About 2 tablespoons red wine vinegar
- 1kg ripe tomatoes
- 1 cucumber, peeled
- 1 green capsicum
- 1 large red onion, roughly chopped
- 1 garlic clove
- 1/3 cup (80ml) olive oil
- Croutons, to garnish
- Chopped hard-boiled egg, to garnish
- Chopped parsley, to garnish
Method

1.Place the bread in a shallow bowl with the red wine vinegar. Add 1/4 cup (60ml) water and set aside while you prepare the vegetables.

2.Remove seeds from the tomatoes, cucumber and capsicum, then roughly chop. In a large bowl or pan, toss the vegetables, onion and garlic with the olive oil. Season with salt and pepper. Blend using a stick blender (you can also use a food processor), then blend in bread. Pass through a sieve into a bowl. Add ice cubes just before serving and garnish with croutons, egg and parsley. Enjoy this before a hot summer lunch.
