These German cookies may be hard to say but they're delicious to eat. They're also super easy. Begin this recipe at least 4 hours ahead.

Ingredients (12)

  • 1 cup (150g) plain flour
  • 1/4 tsp bicarbonate of soda
  • 2 tsp mixed spice
  • 2 tsp ground ginger
  • 1/4 tsp black pepper, finely ground
  • 35g unsalted butter
  • 1 1/2 tbs thickened cream
  • 1/4 cup (60g) brown sugar
  • 2 tbs runny honey
  • 1/4 cup (25g) Macro Almond Meal
  • 1 egg
  • 1 1/4 cups (150g) pure icing sugar, sifted

Method

  • 1.
    Sift the flour, bicarb, mixed spice, ginger, pepper and 1/4 tsp salt into a bowl. Set aside.
  • 2.
    Place the butter, cream, sugar and honey in a small saucepan over low heat and stir until sugar dissolves. Remove from the heat and stand for 5 minutes, then stir through the flour mixture and almond meal. Add the egg and mix well to combine (the dough will be very sticky and wet). Cover dough in plastic wrap and rest for 4 hours.

    Preheat oven to 180°C. Lightly grease 2 baking trays and line with baking paper. Roll 1 tbs-sized balls of cookie mixture and place on the trays, leaving room for the cookies to spread. Bake for 14-15 minutes until golden brown. Allow to cool completely on the trays.
  • 4.
    To make the icing, place icing sugar in a bowl with 5 tsp of hot water. Mix until until smooth. Dip cooled biscuits in the icing, allowing excess to drip off. Place on a wire rack set over a baking tray and set aside until the icing sets.
