German potato salad with yoghurt dressing
Ingredients (8)
- 1 tbs good-quality mayonnaise
- 2 tbs thick Greek-style yoghurt
- 1/2 tsp caster sugar
- 1/4 tsp lemon juice
- 500g waxy potatoes (such as kipfler), peeled, cooked, cut into 2cm chunks
- 1/4 cup finely chopped chives
- 8 slices of smoky bacon, grilled until crisp, crumbled into chunks
- 6 hardboiled eggs, quartered
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Stir mayonnaise, yoghurt, sugar and lemon juice in a large bowl. Season to taste. Just before serving, add cooled potatoes, chives and bacon. Gently toss to coat, then serve topped with eggs.
