Gnocchi with spicy tomato sauce and mozzarella
Finish this delicious gnocchi in tomato sauce under the grill to get the cheese melted and bubbling.
Ingredients (7)
- 2 x 400g cans Ardmona Rich & Thick Classic Tomatoes
- 2 garlic cloves, finely chopped
- Pinch of dried chilli flakes
- 1/4 cup shredded basil leaves
- 625g packet potato gnocchi
- 1/3 cup (35g) grated mozzarella
- Green salad, to serve (optional)
Method

1.Preheat the grill to medium-high.

2.Place the tomatoes, garlic, chilli flakes and basil in a large heavy-based saucepan over medium-high heat. Bring to the boil, reduce heat to medium-low and simmer for 15 minutes, stirring occasionally, until sauce thickens. Season to taste with salt and pepper.

3.Meanwhile, cook gnocchi according to packet instructions. Drain well, then add to the pan of tomato sauce and stir well to combine.

4.Divide the gnocchi among four 2 cup (500ml) baking dishes, then scatter with the mozzarella. Brown under the hot grill for 2-3 minutes until bubbling and golden. Serve with a green salad, if desired.
