Finish this delicious gnocchi in tomato sauce under the grill to get the cheese melted and bubbling.

Ingredients (7)

  • 2 x 400g cans Ardmona Rich & Thick Classic Tomatoes
  • 2 garlic cloves, finely chopped
  • Pinch of dried chilli flakes
  • 1/4 cup shredded basil leaves
  • 625g packet potato gnocchi
  • 1/3 cup (35g) grated mozzarella
  • Green salad, to serve (optional)

Method

  • 1.
    Preheat the grill to medium-high.
  • 2.
    Place the tomatoes, garlic, chilli flakes and basil in a large heavy-based saucepan over medium-high heat. Bring to the boil, reduce heat to medium-low and simmer for 15 minutes, stirring occasionally, until sauce thickens. Season to taste with salt and pepper.
  • 3.
    Meanwhile, cook gnocchi according to packet instructions. Drain well, then add to the pan of tomato sauce and stir well to combine.
  • 4.
    Divide the gnocchi among four 2 cup (500ml) baking dishes, then scatter with the mozzarella. Brown under the hot grill for 2-3 minutes until bubbling and golden. Serve with a green salad, if desired.
