- 6-8 slices baguette (sliced on the diagonal)
- 1 garlic clove
- 300g soft goat's cheese
- Zest and juice of 1 small lemon
- 1 teaspoon chopped fresh rosemary leaves
- 125g good-quality cherry jam
- Mixed leaf salad, to serve

1.Toast or grill the baguette slices. Halve the garlic clove and rub the bread, while still warm, with the cut side of the garlic.

2.In a small bowl, mash together the goat's cheese, lemon rind and juice, and chopped rosemary, then season with salt and pepper. Spread the goat's cheese mixture over the baguette slices.

3.Warm the jam in the microwave for 30 seconds on high, then dollop over the goat's cheese toasts. Serve with a mixed leaf salad.
