Goat's cheese and maple bacon slice
This easy sweet and sour slice can be served up for breakfast, brunch, lunch or dinner. It's that good!
Ingredients (10)
- 2 2/3 cups (375g) white spelt flour, sifted
- 2 1/2 tsp lemon thyme leaves
- 1 1/2 tsp bicarbonate of soda, sifted
- 3 eggs, lightly beaten
- 3/4 cup (200g) thick Greek-style yoghurt
- 3/4 cup (185ml) extra virgin olive oil
- 150g goat’s cheese, crumbled
- 300g streaky bacon
- 1/4 cup (60ml) maple syrup
- Micro purple basil, to serve

1.Preheat oven to 200°C. Grease and line a 20cm x 30cm slice pan with baking paper, leaving 5cm overhanging long sides of pan.

2.Combine flour, bicarb, 2 tsp lemon thyme and a pinch of salt in a bowl.

3.In a separate bowl, combine egg, yoghurt and oil. Using a fork, fold into dry ingredients and stir in cheese. Transfer to slice pan.

4.Trim bacon to 4cm longer than the width of the pan and arrange crossways on top, overlapping slices until slice is covered (bacon will shrink during cooking). Brush with 2 tbs maple syrup, then bake for 30 minutes or until a skewer inserted into the centre comes out clean.

5.Preheat the oven grill to medium-high. Brush bacon with remaining maple syrup, scatter with remaining lemon thyme and grill for 90 seconds or until bacon is golden and bubbling.

6.Serve scattered with micro purple basil.
