Gochujang-glazed skirt steak
Gochujang is a fermented chilli paste which is giving that trademark Korean lip-smacking savouriness to dishes all around town.
Ingredients (8)
- 2 garlic cloves, finely grated
- 1 tbs grated ginger
- 1 tbs peanut or sunflower oil
- 2 1/2 tbs gochujang
- 2 tsp brown or raw sugar
- 1kg skirt steak, trimmed
- 1 butter lettuce, leaves separated
- Chopped pickled chilli (from Asian grocers), coriander leaves, sliced spring onion and lime wedges, to serve

1.Preheat a barbecue or chargrill pan to high. To make glaze, combine garlic, ginger, oil, gochujang and sugar in a bowl. Season and brush over steak, then cook for 3 minutes each side for medium-rare or until cooked to your liking. Rest, loosely covered with foil, for 5 minutes. Thinly slice.

2.Serve steak in lettuce cups with chilli, coriander and spring onion. Drizzle over steak resting juices and squeeze with lime.
