This awe-inspiring dessert is the perfect balance between impressive and absolutely comforting.

Ingredients (9)

  • 150g golden syrup, plus extra to brush
  • 100g unsalted butter, chopped
  • 1/3 cup (80ml) thickened cream
  • 8 small Granny Smith apples, peeled, cored cut into 2cm-thick wedges
  • Ice cream, to serve

Dumplings

  • 100g cold unsalted butter, cut into 5mm pieces
  • 2 cup (300g) self-raising flour
  • 2 eggs, lightly beaten
  • 1/4 cup (60ml) thickened cream

Method

  • 1.
    Preheat oven to 180°C. To make the caramel apples, place golden syrup and butter in a large frypan with a pinch of salt flakes, and using a whisk stir until melted and combined. Stir in cream and bring to a simmer. Stir in apple. Simmer for 8-10 minutes until sauce begins to thicken. Remove from heat and cool to room temperature.

    Meanwhile, for the dumplings, rub together butter, flour and a pinch of salt flakes in a bowl until mixture resembles coarse breadcrumbs. Stir through egg and cream, and roll into tablespoon-sized balls. Spoon apple mixture into a 22cm wide x 5.5cm deep round baking dish.

    Arrange dumplings over the top. Cover with a sheet of baking paper and a sheet of foil and bake for 20-25 minutes until three quarters cooked. Remove foil and baking paper, and bake for a further 12-15 minutes until dumplings are puffed and deep golden. Brush with extra golden syrup and serve with ice cream.
