Grapes with mascarpone
Autumn means an endless supply of grapes, which are perfect for Maggie Beer's decadent dessert.

Ingredients (4)

  • 1/2 cup (50g) walnuts
  • 1kg large red seedless grapes, halved
  • 500g mascarpone (or creme fraiche if your prefer a more savoury taste)
  • 1 tablespoon brown sugar

Method

  • 1.
    Preheat oven to 170°C.
  • 2.
    Lay walnuts on a baking tray and bake for 6-8 minutes or until toasted. Place in a tea towel and rub to remove the excess skin, then roughly chop.
  • 3.
    Preheat the grill to medium-high.
  • 4.
    Place the grapes in a large, shallow ceramic baking dish. Sprinkle the walnuts on top of the grapes. Carefully spoon over the mascarpone, spreading evenly over the grapes. Dust the top with the brown sugar.
  • 5.
    Place the baking dish under the grill for 10 minutes to caramelise the top. Serve immediately.
