Fill the air with fragrant mouth-watering spices, pile the table with curries, then dive into a spectacular Indian feast.
Ingredients (14)
- 1 lime, zested, juiced
- 1 small lemon, zested, juiced
- 3 teaspoons grated fresh ginger
- 4 x 120g boneless snapper fillets
- 2 tablespoons vegetable oil
- 2 onions, sliced
- 2 garlic cloves, crushed
- 2 long green chillies, seeded, sliced
- 10 fresh curry leaves
- 1 teaspoon good-quality curry powder
- 1 cinnamon stick
- 1/2 teaspoon turmeric
- 400ml coconut milk
- Pappadums and steamed green vegetables, to serve

1.Combine the lime and lemon juice and zest with 1 teaspoon ginger, add the snapper and set aside for 30 minutes.

2.Heat the oil in a frying pan, add the onions and cook until soft, add the garlic, chilli, curry leaves and powder, spices and remaining ginger, and cook for 30 seconds. Add the coconut milk and stir to combine. Cook over a low heat for 1 minute, then add the fish and marinade. Poach for 5-6 minutes or until cooked through.

3.Serve with pappadums and steamed greens.
