Green pea puree
Soft sweet peas are a weeknight winner on any table, add your favourite meat or fish dish and you've got a well-rounded meal.
Ingredients (7)
- 2 tbs extra virgin olive oil
- 1 onion, chopped
- 1 garlic clove, chopped
- 1 cup (250ml) chicken stock
- 4 cups (640g) fresh podded peas
- 1 tsp caster sugar
- 1 tbs chopped mint
Method

1.Heat oil in a saucepan over medium heat, then add onion and cook for 3-4 minutes until just starting to colour. Add garlic, chicken stock, peas and sugar, and cook for 7-8 minutes until peas are tender. Remove from heat, mash using a fork or potato masher and season. Stir through the mint, to serve.
