Grilled peach ice tea
There’s nothing more refreshing than a cup of tea, and this is a great cooler to whip up on a hot day. The
floral notes in French Earl Grey, which include hibiscus flowers, sunflowers and rose petals, pair well with
grilled stone fruit such as peaches, particularly as peach is a member of the rose family. – LH
Ingredients (6)
- 2 tbs loose-leaf French Earl Grey tea
- 200ml agave nectar (from health food shops)
- 6 lemon thyme sprigs
- Ice cubes, plus extra to serve
- 2 yellow peaches, quartered, stones removed
- 1/2 cup (125ml) lemon juice

1.Place 4 cups (1L) water in a medium saucepan and bring to the boil. Add tea, remove from heat and stand for 5 minutes to infuse. Strain into a large heatproof jug. Stir through agave and lemon thyme. Add ice and stand to cool.

2.Meanwhile, heat a barbecue or chargrill pan to high heat. Grill peach, flesh-side down and turning, for 2 minutes or until grill marks appear. Remove from heat and stir through tea. Stir through lemon juice and extra ice, and serve immediately.
