Grilled rib-eye with blue cheese sauce

Ingredients (9)

  • 4 x 180g each rib-eye steaks
  • 2 teaspoons olive oil
  • Parsley roast potatoes, to serve

Blue cheese sauce

  • 200g blue cheese (such as Stilton or gorgonzola)
  • 1/3 cup (80g) sour cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon paprika
  • Good pinch of ground cayenne pepper

Method

  • 1.
    Place 150g of the blue cheese with the other sauce ingredients in the bowl of a food processor, season with sea salt and pepper, and whiz to combine. (Or mash and then beat with a wooden spoon until smooth.)
  • 2.
    Brush the steaks with olive oil. Heat a frypan over high heat and pan-sear the steaks on one side for 2-3 minutes until well-browned. Turn once and cook briefly for a further 1 minute on the other side, for a medium-rare result.
  • 3.
    Set aside to rest for 1 minute and season well with sea salt and pepper. Place the steaks on 4 serving plates, spoon sauce over the top and crumble over remaining cheese. Serve with parsley potatoes .
