Grilled scallops with green peppercorns and garlic
This is a really simple recipe to put together. I’ve added a dash of cream here, and green peppercorns, which I love with seafood, says chef Gill Meller.

Ingredients (7)
- 8 large scallops with roe, cleaned
- 20g unsalted butter, chopped
- 2 garlic cloves, thinly sliced
- 2 tsp green or black peppercorns
- 2 thyme sprigs
- 1/4 cup (60ml) double cream
- Bread, to serve

1.Preheat the grill to high. Place the scallops in an ovenproof dish or a small ovenproof frypan. Dot the butter over and around the scallops and add the garlic, peppercorns and thyme. Season well with salt.

2.Place the dish under the grill, close to the flame or element. Grill the scallops for 2-3 minutes on one side, then remove from grill, turn and add the cream. Gently shake the dish to combine ingredients, then return to grill for a further 2 minutes or until the scallops are cooked through and the sauce is bubbling.

3.Serve the scallops with hunks of good bread for mopping up the sauce.
