Grilled zucchini and mozzarella salad
Ingredients (6)
- 2 large zucchinis, sliced lengthways
- 1/3 cup (80ml) extra virgin olive oil, plus extra to drizzle
- 2 tbs white wine vinegar
- 1/4 cup oregano leaves, roughly chopped
- 4 zucchini flowers, stamens removed, halved lengthways
- 1 buffalo mozzarella ball, torn

1.Toss zucchini slices and 2 tbs salt in a bowl. Place in a colander set over a bowl for 10 minutes to drain.

2.Place oil, vinegar and oregano in a bowl and whisk to combine. Set aside.

3.Preheat a barbecue or chargrill pan to high.

4.Rinse zucchini under cold running water and pat dry with paper towel. Place on a tray with zucchini flowers, then brush all over with olive oil.

5.Chargrill zucchini slices and flowers, turning halfway, for 2-3 minutes until charred and tender.

6.Arrange zucchini and zucchini flowers on a platter and top with mozzarella. Drizzle with dressing to serve.
