Move over, roast beast – this neon-green tropical troublemaker is about to become the star of your Christmas celebrations! Part mischievous melon, part coconut paradise, this gloriously gaudy Grinch cocktail combines the zesty zing of lime and pineapple with a wicked kick of coconut rum. Rimmed with snowy coconut flakes and topped with a candy cane and a sprinkle of edible glitter, it's basically Christmas in the Caribbean – if the Grinch took a holiday to somewhere considerably sunnier than Whoville.
Ingredients (7)
- Simple syrup and desiccated coconut, to decorate
- 30ml lime juice
- 30ml pineapple juice
- 45ml coconut rum
- 60ml Midori
- Ice cubes, to shake and to serve
- Candy cane and edible glitter, to serve

1.Lightly coat the rim of your glass with simple syrup. Dip the rim into desiccated coconut to cover the edge. Set the glass aside.

2.Combine lime juice, pineapple juice, coconut rum and Midori in a cocktail shaker. Fill the shaker with ice and shake for 10-15 seconds to chill.

3.Strain into your prepared glass over a large ice cube. Stir in a pinch of edible glitter for a shimmering effect and garnish with a small candy cane to serve.
