Sally Obermeder's 'Guilt-free Honeycomb’ is an extract from her book, The Good Life. This tempting honeycomb allows for indulgence without the guilt!
Ingredients (3)
- 110 g (3 ¾ oz. / ½ cup) sugar, or 50 g (1 1/3 oz.) stevia
- 4 tablespoons honey, or maple syrup or golden syrup
- 1 ½ teaspoons bicarbonate of soda (baking soda)

1.Line a baking tray with baking paper and have it close at hand.

2.In a large saucepan, bring the sugar and honey to a low boil and cook until the mixture is a golden colour.

3.As as soon as it is a golden caramel colour, immediately remove from the heat and, working quickly and carefully (because hot caramel can burn you), add the bicarbonate of soda.

4.Stir the bicarbonate of soda in quickly; it will immediately froth. Pour it at once into the prepared tray. Let it cool at room temperature until it hardens, then break it into pieces and store in an airtight container.
