Sweet and salty chocolate date granola.

It's also high in antioxidants from the berries, cocoa and cacao nibs, and high in fibre. Sometimes I add a little coffee powder to the mix, for an extra energy kick!” – Sergio Perera
Ingredients (9)
- 50g goji berries (substitute sultanas)
- 60g fresh dates, pitted
- 150g raw almonds, chopped
- 100g rolled oats
- 100g raw hazelnuts, chopped
- 65g cacao nibs
- 40g cocoa powder
- 1 tsp vanilla bean paste
- Greek-style yoghurt and mixed berries, to serve (optional)

1.Preheat oven to 120°C/100°C fan-forced. Line a baking tray with baking paper. Place the goji berries in a bowl and cover with warm water for 10 minutes to hydrate. Place dates in another bowl and cover with 1/4 cup (60ml) hot water. Stand for 5 minutes to soften, then place dates and water in a food processor and whiz to a paste. Drain goji berries.

2.Place remaining ingredients and 2 tsp salt flakes in a large bowl. Add the date paste and drained goji berries. Using your hands, mix until evenly coated. Spread in an even layer on prepared tray and bake for 45 minutes.

3.Set aside to cool, then serve with yoghurt and mixed berries, if desired (see notes).
Recipe Notes
Granola will keep for up to 2 weeks in an airtight container in a cool, dark place.
