These Thai-style eggs are traditionally deep-fried and doused in sugary caramel. Here we give them a healthier twist.

Ingredients (9)

  • 30g coconut oil
  • 1/3 cup (80ml) fish sauce
  • 1/3 cup (80ml) maple syrup
  • 4cm piece (20g) ginger, sliced
  • 2 tsp hot chilli sauce
  • 6 dried red chillies
  • Juice of 2 limes
  • 6 soft-boiled eggs
  • Coriander sprigs, baby red shiso, fried shallots, black and white sesame seeds and bean sprouts, to serve

Method

  • 1.
    Combine oil, fish sauce, maple, ginger, chilli sauce, dried chillies and 2 tbs water in a saucepan over medium heat. Simmer for 8-10 minutes or until thickened.
  • 2.
    Remove from heat, stir through lime juice and cool completely.
  • 3.
    Divide eggs, herbs, shallots, sesame seeds and bean sprouts among bowls. Drizzle with dressing to serve.
