Healthy three-bean tuna salad with chilli soy dressing

You’ll be surprised how tasty and delicious this simple salad is, and how quickly it will become your new favourite! Loaded with three types of beans (green beans, edamame and white beans) and affordable canned tuna, it's a great healthy and budget option for weeknights or lunch salads. Plus, you’ll be making double batches of the dressing in no time.
Ingredients (12)
- 500g green beans, trimmed
- Ice cubes, to cool
- 200g packet frozen peeled edamame (see recipe notes), thawed
- 400g can white beans, rinsed and drained
- 2 x 125g cans tuna slices in olive oil, drained
Dressing
- 1/4 cup (60ml) extra virgin olive oil
- 2 tbs lemon juice
- 1 tbs honey
- 3 tsp soy sauce
- 2 tsp crispy chilli oil
- 1 tsp sesame oil
- 1 garlic clove, finely grated

1.Bring a medium saucepan of salted water to the boil. Add green beans and cook for 3 minutes. Meanwhile, fill a large bowl with cold water and add ice cubes. Drain the beans, then immediately plunge into the icy water. Stir to disperse the heat. Set aside until beans are cold.

2.Meanwhile, make the dressing. Combine all ingredients in a jar with a lid. Close lid and shake well until combined and honey has dissolved. Season with salt flakes and freshly ground black pepper to taste.

3.Drain green beans and pat dry with paper towel. Arrange green beans, edamame and white beans on a serving plate. Top with tuna and serve drizzled with dressing.
Recipe Notes
You can buy edamame in the freezer section of supermarkets. They come either in their shell or already shelled.
Leftovers will last in an airtight container in the fridge for up to 5 days. Serve with a bowl of steamed rice for a more substantial meal.
