Hoi sin chicken rice paper rolls

With the help of a barbecued chicken, these tasty rice paper rolls are ready in minutes.
Ingredients (6)
- 1 Lebanese cucumber
- 6 spring onions
- 6 large round rice paper wrappers*
- 1 cup shredded barbecue chicken, skin removed
- 1 cup shredded iceberg lettuce
- 2 tablespoons hoi sin sauce
Method

1.Cut the cucumber into 5mm-thick batons. Trim ends of spring onions and cut into 5mm-thick batons.

2.Fill a shallow bowl with warm water. Dip a sheet of rice paper in the water for 30 seconds. Remove and shake off excess water. Place rice paper sheet on a bench and place 1-2 tablespoons of chicken at the end nearest to you, then place a baton each of cucumber and spring onion on top.

3.Add a little shredded lettuce and drizzle with a little hoi sin sauce. Fold in the sides of the rice paper sheet, then roll up to enclose filling. Repeat with the remaining rice paper sheets and filling ingredients.

4.Place the rolls in an airtight container and cover with a couple of sheets of dampened paper towel to keep them from drying out. Refrigerate until ready to serve.

5.Serve rice paper rolls with extra hoi sin sauce for dipping if desired.
