With the help of a barbecued chicken, these tasty rice paper rolls are ready in minutes.

Ingredients (6)

  • 1 Lebanese cucumber
  • 6 spring onions
  • 6 large round rice paper wrappers*
  • 1 cup shredded barbecue chicken, skin removed
  • 1 cup shredded iceberg lettuce
  • 2 tablespoons hoi sin sauce

Method

  • 1.
    Cut the cucumber into 5mm-thick batons. Trim ends of spring onions and cut into 5mm-thick batons.
  • 2.
    Fill a shallow bowl with warm water. Dip a sheet of rice paper in the water for 30 seconds. Remove and shake off excess water. Place rice paper sheet on a bench and place 1-2 tablespoons of chicken at the end nearest to you, then place a baton each of cucumber and spring onion on top.
  • 3.
    Add a little shredded lettuce and drizzle with a little hoi sin sauce. Fold in the sides of the rice paper sheet, then roll up to enclose filling. Repeat with the remaining rice paper sheets and filling ingredients.
  • 4.
    Place the rolls in an airtight container and cover with a couple of sheets of dampened paper towel to keep them from drying out. Refrigerate until ready to serve.
  • 5.
    Serve rice paper rolls with extra hoi sin sauce for dipping if desired.
