Hoisin beef strips with snowpea sprout salad

Mouth-watering Asian flavours spring to life in this super-healthy and easy beef stir-fry.
Ingredients (10)
- 1/3 cup (80ml) hoisin sauce
- 1 tablespoon fish sauce
- 1 tablespoon rice vinegar
- 50g snowpea sprouts
- 1 long red chilli, seeds removed, thinly sliced
- 1 firmly packed cup coriander sprigs
- 1 large green capsicum, thinly sliced
- 1 tablespoon sunflower or canola oil
- 600g beef stir-fry strips
- 4 spring onions, cut into 6cm lengths
Method

1.Place hoisin, fish sauce, rice vinegar and 1 1/2 tablespoons boiling water in a small bowl and mix to combine. Toss half the mixture in a bowl with the sprouts, chilli, coriander and capsicum.

2.Heat half the oil in a large wok over high heat until smoking. Stir-fry half the beef for 1 minute, then set aside and repeat with remaining oil and beef. Return all beef to wok with spring onion, stir-fry for a further minute, then add remaining sauce and toss to coat well. Serve with the salad.
