Homemade fresh cheese with berries
Homemade fresh cheese with berries
Do as the French do and serve fresh cheese (fromage blanc) at the end of the meal.

Ingredients (6)

  • 250g ricotta cheese
  • 250g Greek-style yoghurt
  • 1 tablespoon icing sugar
  • 500g mixed fresh berries (such as raspberries, blueberries and strawberries)
  • 2 tablespoons flaked almonds, toasted
  • Honey (optional) and biscuits, to serve

Method

  • 1.
    Place the ricotta, yoghurt and icing sugar in a food processor and process until smooth. Transfer to a sieve lined with damp thick muslin or a clean, damp Chux. Place the sieve over a bowl, then cover with plastic wrap and leave to drain in the fridge for 12 hours or overnight. Remove the cloth, then transfer to an airtight container and keep in the fridge for up to 2 days until needed.

    At the picnic, serve generous spoonfuls of the fresh cheese and scatter with berries and almonds. Drizzle with honey, if desired, and serve with the biscuits.
