Steak, mushroom and guinness pies
These individual steak and mushroom pies are sure to be a hit.
Ingredients (19)
- 1 onion, chopped
- 2 cloves garlic, crushed
- 300g small button mushrooms, trimmed
- 400g small Swiss brown mushrooms
- 1/3 cup (80ml) extra virgin olive oil
- 120g unsalted butter
- 1.25kg wagyu beef chuck steak, cut chunks
- ¼ cup (35g) plain flour
- 440ml can Guinness
- 1 litre beef stock
- 2 tbs Worcestershire sauce
- ¾ cup oregano, finely chopped
- ¾ cup flat-leaf parsley, finely chopped
- 6 sheets frozen puff pastry, defrosted
- 1 egg, lightly beaten
Caramelised onion
- 80g butter
- 3 red onions, thinly sliced
- 2½ tbs brown sugar
- 1 tbs balsamic vinegar

1.Heat half the oil and butter in a pan, add onion, garlic and mushrooms and cook for 4-5 minutes until onion softens. Set aside.

2.Toss beef with flour. Season. Add to pan with remaining oil and butter and cook for 6-8 minutes until browned. Add onion and mushroom, Guinness, stock, Worcestershire and herbs, cover and simmer over low for 1½-2 hours until meat is very tender. Season.

3.For onion, heat butter in a frying pan, add onion and cook for 5-6 minutes until softened. Reduce to low, stir in sugar and balsamic and cook for 10-12 minutes until onion is caramelised. Add to beef mixture.

4.Preheat oven to 220°C. Grease 2 large oven trays and line with baking paper. You’ll need 6 x 375ml (1½-cup) dishes. Using one as a guide, cut lids out of pastry sheets. Place on prepared trays and brush with eggwash. Season. Bake for 30-35 minutes until golden and cooked.

5.Divide beef mixture among pie dishes, top with baked lids and serve.
