Love radishes? Then you'll love this daikon salad that's filled with beautifully sweet and sour notes and the creaminess of goat's cheese.

Ingredients (8)

  • 3 pears, halved
  • 1 tbs sunflower oil
  • ¼ cup (60ml) apple cider vinegar
  • ¼ cup (90g) honey
  • 500g shredded daikon (about 1 large daikon – we used a julienne peeler)
  • 1 bunch rocket
  • 100g ash-rolled goat’s cheese
  • 1 tbs black sesame seeds (optional)

Method

  • 1.
    Season the pears. Heat a frypan over high heat until smoking, add oil, then add pears, cut-side down. Cook for 1 minute or until dark golden and almost burnt. Remove the pears and set aside in a heatproof bowl.
  • 2.
    While the pan is still hot, add vinegar and honey. Stir to combine. Pour over the pears and set aside to cool and pickle slightly. Thinly slice the cooled pears, discarding cores and reserving liquid.
  • 3.
    Arrange daikon, rocket and pear on a serving platter. Crumble over cheese, sprinkle with sesame seeds and drizzle with reserved pickling liquid to serve.
