Ingredients (5)

  • 1 1/2 cups (225g) self-raising flour
  • 2 cups (500ml) vanilla ice cream, melted, plus extra frozen ice cream to serve
  • 1 teaspoon vanilla extract
  • 250g punnet strawberries, hulled, roughly chopped, to serve (optional)
  • 2 tablespoons caster sugar, to serve (optional)

Method

  • 1.
    Preheat the oven to 180C. Grease and flour a 12cm x 22cm loaf pan. Combine the flour, melted ice cream and vanilla in a large bowl and stir until the mixture is just combined but still lumpy. Transfer the mixture to the prepared pan and bake for 35-40 minutes until golden and a skewer inserted into the centre comes out clean. Set aside to cool slightly, then turn out onto a wire rack.

    Meanwhile, combine the strawberries and sugar in a bowl and toss to coat.
  • 3.
    Slice the bread while warm and serve with strawberries and extra ice cream.
