Talisker spiced hot toddy

Cold wintry nights call for warming hot toddies made with Talisker whisky from the Isle of Skye.
Ingredients (9)
- 80ml honey
- 60ml freshly squeezed lemon juice
- 500ml Bee Mead (available at Dan Murphy’s)
- 1 bay leaf
- 1 cinnamon quill
- 1 star anise
- 120ml Talisker 10 Year Old Scotch Whisky
- Nutmeg, for garnish (optional)
- Gum leaves (optional)

1.Put honey, lemon juice, ½ cup water, mead and spices in a saucepan over a medium-high heat. Bring to the boil, reduce heat to medium and simmer for 10 minutes. Preheat four mugs, then add 30ml Talisker to each. Strain in the honey mixture, then garnish with nutmeg and gum leaves, if using, to serve.
