Hummus with spicy chorizo and green chilli
Bring a spicy flavour burst to your hummus with this dip recipe.
This recipe is an extract from our cookbook, delicious. daily (HarperCollins, $45).
Ingredients (8)
- 2 long green chillies, finely chopped
- Tabasco Green Pepper Sauce, to taste
- Juice of 3 lemons
- 400g can chickpeas, rinsed, drained
- 1/2 cup (140g) tahini
- 1 garlic clove, crushed
- 2 fresh chorizo sausages, casings removed, finely chopped
- 1 tbs pomegranate molasses (from delis and Middle Eastern food shops)

1.To make the relish, combine chilli, Tabasco and the juice of 1 lemon in a bowl. Season and set aside.

2.Place the chickpeas in a food processor and whiz until finely chopped. Add tahini and remaining juice from 2 lemons and whiz to combine. With the motor running, slowly add 100ml iced water in a thin, steady stream. Whiz until very smooth. Add garlic and whiz to combine. Season with salt. Transfer dip to a bowl, cover and chill for up to 3 days.

3.Place chorizo in a non-stick frypan over medium heat. Cook, stirring, for 6-7 minutes or until crisp. Stir in molasses and remove from heat.

4.Top hummus with chorizo mixture and scatter with relish to serve.
